Being originally from Canada and specifically a small town in rural Ontario I knew when I read the brief for this competition that I wanted to incorporate something that part of my life and my upbringing into this drink. I used the Roots Mastic because being made from the resin of the tree spoke to me. Obviously I wanted to use maple syrup, maple syrup is an incredibly Canadian product and is very much a part of our cultural identity.
Being that I now have moved to London to further my career I wanted to add in an element of both England but also celebration because getting here was a big step and something worth celebrating, for that reason I chose an English champagne to top off my highball.
