My inspiration comes from my trip to the magic Island of Chios full of history and the mediterranean culture that the people have , really similar to my city in the south of Spani, Murcia.
It helps as well when you work with Greek people at work and they always try to make something with Roots.
I wanted to represent those people that they work really hard to make Mastica , the way the cut the tree with a small knife , I think a swizzle drink is the best way to represent it in Bartending . In every ingredient I try to represent the flavour of the tree, smoky pine flavour, pineapple for the mouth feel, lime for the citrusy and refreshing notes, walnut bitters representing the area where the trees are. Low abv long drink that everyone could make easy everywhere.
