Contessa di Chios:
St George Bruto Americano
This cocktail is a riff on a negroni variation called a Contessa, which is equal parts dry vermouth, gin, and Aperol. In order to showcase the herbal aromatics of the Mastiha, I used a split base of bitter liqueurs to stand in for the amaro, and a floral gin to complement. The orange bitters bring out the citrus notes in the bitter spirits and give the cocktail a refreshing finish.
